海港大酒樓 (Sea Harbour Seafood Restaurant) 的生炸妙齡鴿和海港第一包早已是遠近馳名,食客皆知,原來在海港吃海鮮一樣妙妙妙。近年,在溫哥華已可經常吃到新鮮的游水黑魚,也即是西餐館的貴價菜之一的 sable fish。此魚腴滑多脂,吃到嘴,只覺魚肉如脂肪一樣細滑有質感,魚脂亦香鮮肥美,一魚兩吃是最好的做法﹕他們的籠仔蒸頗為特別,一人份的魚肉以籠仔蒸,先舖荷葉,加入魚塊後添些紅棗絲、陳皮絲、肉絲、火腿絲、絲等一齊蒸好,每人一籠,永不落空。又或來一客三杯頭腩或砂窩黑魚頭腩,後者的頭抽香味,真是齒甲留香,肯定讓你連汁也用來拌飯吃呢。

 

如果吃膩了中式常見的龍蝦炮製法,不妨一試海港大廚華哥自創的上湯黃金龍蝦。這上湯龍蝦加入了可以降膽固醇的南瓜茸及少許惹味的金沙,即炒過的鹹蛋黃,為傳統菜式來個味覺的突破。而且,龍蝦熟後呈紅彤彤的色澤,加上南瓜茸也是滿堂紅,真是好一個龍蝦也添黃金甲。

 

說回海港的招牌菜生炸妙齡鴿為何可以成為鎮店之寶,因為他們採用指定吃特別飼料的12日大之嫩鴿,所以鴿骨還未變硬,而鴿肉又剛好長得較為肥美,精選過的飼料更使鴿肉沒有羶味;除了原材料要頂班之外,生炸也是非常重要的關鍵,經過醃味、上皮、吊乾、生炸的程序,自然是肉滑多汁,和坊間以鹵水浸熟再炸的「偷步」方法當然是大異其趣了。
